The SEVEN WONDERS of theWorld!

A group of students were asked to list what they thought were the present "Seven Wonders of the World." Though there were some disagreements, the following received the most votes:
1. Egypt's Great Pyramids
2. Taj Mahal
3. Grand Canyon
4. Panama Canal
5. Empire State Building
6. St. Peter's Basilica
7. China's Great Wall
While gathering the votes, the teacher noted that one student had not finished her paper yet. So she asked the girl if she was having trouble with her list. The girl replied, "Yes, a little. I couldn't quite make up my ! mind because there were so many."The teacher said, "Well, tell us what you have, and maybe we can help.
"The girl hesitated, then read, "I think the 'Seven Wonders of the World' are:

1. to see...

2. to hear...

3. to touch...

4. to feel...

5. to taste...

6. to laugh...

7. to LOVE

Do you realize that the only time in our lives when we like to get old is when we're kids?

If you're less than 10 years old, you're so excited about aging that you think in fractions.
"How old are you?" "I'm four and a half!" You're never thirty-six and a half. You're four and a half, going on five!

That's the key.

You get into your teens, now they can't hold you back. You jump to the next number, or even a few ahead.

"How old are you?" "I'm gonna be 16!" You could be 13, but hey, you're gonna be 16! And then the greatest day of your life . . . you become 21. Even the words sound like a ceremony . YOU BECOME 21 YESSSS !!!

But then you turn 30. Oooohh, what happened there? Makes you sound like bad milk. He TURNED; we had to throw him out. There's no fun now, you're Just a sour-dumpling.

What's wrong? What's changed?You BECOME 21, you TURN 30, then you're PUSHING 40.Whoa! Put on the brakes, it's all slipping away. Before you know it, you REACH 50 . . and your dreams are gone.

But wait!!! You MAKE it to 60. You didn't think you would!

So you BECOME 21, TURN 30, PUSH 40, REACH 50 and MAKE it to 60.You've built up so much speed that you HIT 70!

After that it's a day-by-day thing;
you HIT Wednesday!

You get into your 80s and every day is a complete cycle;
you HIT lunch; you TURN 4:30; you REACH bedtime.And it doesn't end there.

Into the 90s, you start going backwards; "I Was JUST 92."

Then a strange thing happens. If you make it over 100, you become a little kid again. "I'm 100 and a half!"

May you all make it to a healthy 100 and a half!!

HOW TO STAY YOUNG:
1.Throw out nonessential numbers. This includes age, weight and height. Let the doctors worry about them. That is why you pay "them"

2. Keep only cheerful friends. The grouches pull you down.

3. Keep learning. Learn more about the computer, crafts, gardening, whatever. Never let the brain idle. " An idle mind is the devil's workshop." And the devil's name is Alzheimer's.

4. Enjoy the simple things.

5. Laugh often, long and loud. Laugh until you gasp for breath.

6. The tears happen. Endure, grieve, and move on. The only person who is with us our entire life, is ourselves. Be ALIVE while you are alive.

7. Surround yourself with what you love, Whether it's family, pets, keepsakes, music, plants, hobbies, whatever. Your home is your refuge.

8. Cherish your health: If it is good, preserve it. If it is unstable, improve it. If it is beyond what you can improve, get help.

9. Don't take guilt trips. Take a trip to the mall, even to the next county; to a foreign country but NOT to where the guilt is.

10. Tell the people you love that you love them, at every opportunity.

AND ALWAYS REMEMBER:

Today

I made a promise to myself

For what good does promises bring

When all you can do is feel and care and love…

2002 One of the thoughts circling on my mind a few years back. I think it was duirng my student-come-back years in Achitecture- 2002. Let me explain what i'm talking about... You see after twenty 20 long years of absence in the academe, i came back to my alma mater (Cebu Institute of Technology (CIT) to realize my age-old dream of getting a degree . Well, i did get one anyhow: a marriage degree, a far cry from what i must become.. as if i was obliged? Imagine quitting school when I was a semester away for graduation! But then, it did not seem to matter. I was in love... and i still am! Today, i am now a full pledged- friendly neighbor- Architect! Treasurer- U.A.P. (United Architects of the Philippines) Sugbo Chapter- Area C- Visayas. Thank you !

Virgen De La Regla Church

The place where i made my vow: "...to love and cherish, until death do us part". These are the words i uttered inside the altar some twenty six years ago. Opps! My,has it been that long already! As i heard, this church is now considered a national shrine and i feel so elated being one of its parishioners. It is currently undergoing a small scale renovation specifically on roof. Now isn't this a beauty? I can still remember when i took this shot. Actually, in front of this very serene but fantastic view, is a whole lot of people standing beside me, almost in front of me, and at my back, playing even brushing my elbows at times; as i simply put it: chaos ! But i managed to eek out of them as i stood so steadily to capture the calmness of the sea focusing its stillness while lulling the island to its deep slumber. Thank you Lord.

Filipino Woman then… now

For centuries, the Philippines had in so many ways undergone a series of conquests after conquests experiencing both hard times and good times. The events were so varied; the archipelago almost ran out of its own nucleus. They enormously affected the Filipino society in general and each individual men and women in particular. From the early invasion by the Spaniards which lasted more than three hundred years until the Americans came and gone, this country were subjected to various forms of leadership and are crucial years of coverage in this discussion as basis for the following observations. Within this time frame, the indigenous people in the Philippines acquired a great sense of cultural manifestations as well as internal modifications of both genders.

A number of inevitable changes can be observed in many Filipino women now a days, especially when one is keen in observing these changes. More so, these changes can be seen dramatically if one knew of the Filipina before any colonizer got hold of the land influencing and engulfing greatly the minds and ways and of the culture of Filipino society. Indeed it is a fact that Filipino women widely known as Filipina, have changed a great deal and adapted unknowingly the styles and norms of the westerners when she came in contact with the New World. But before we can make any judgment or deduce reasons for being so, allow me to present here some of the events which took place as early as man lived in this archipelago, and also during the reign of the Datus, their empires, to the times when foreigners came and gave a mind set of their own to the woman of our past. Discussions herein are based on accepted and authenticated documents.

Pre-Spanish regime:
When the Philippines were on its birth stage or when it was yet scarcely inhabited, women played quite a good level of profile. They existed equally with the men and not merely for the purpose of reproduction. Yet they lived simple lives, had simple homes, and wore simple clothing or none at all. But the women in those times enjoyed life as much as contributed a great deal of talent and judgments for the family’s well being.

As observed, when Filipino women were left in the dwellings while the men hunt for food, they were the managers of their homestead, took care of livestock which abound around their property and was solely decisive of the family landholdings. “….she had the task of agricultural production once the ground had been prepared by the man. She engaged herself in weaving and devised ways of preserving foods thus pottery-making came to be useful, while managed the trading of products and wares” (Lorna S. Torralba Titgemeyer). These women were not merely just sex partners for the men in this point of time but were decisive to the point that they practiced abortion after having the desired number of children thought they should have. The lived not only to be subjects for pro-creations but also enjoyed freedom in making decisions for the family. They were the man’s companion, a sex mate, partner and were not confined only to domestic affairs like having a baby or not. Even the giving of names of their children was her prerogative. This indigenous Filipina or “La Mujer Indigena” – as what Lorna S. Torralba Titgemeyer called her- was equally important in the community.
Furthermore was the woman’s role so great when the daughters of the datus of the early Philippines were allowed to succeed their father’s reign and even became political leaders themselves. “The most famous of the women leaders of pre-Spanish society was Princess Urduja of Pangasinan. She was supposed to be a beautiful Amazon, courageous and intelligent, possessing knowledge of languages and culture of Old Asia.”(Lorna S. Torralba Titgemeyer “La Mujer Indigena “, The Native Woman)- a description of the Filipino Woman during Pre-Spanish Time. Truthfully, many roles were played by Filipino women before the Spaniards came and conquered the Philippine archipelago. During these pre-Spanish era women were allowed to acquire roles in the highest rank of society and were entitled to privileges equal that of the men in the same rank. These women were given equal importance with men. The inheritances were also divided equally among both sexes. One of the conveniences enjoyed by the women of the past was arranged marriage. A certain amount of money called dowry was agreed upon by both parties together with their parents according to how much the bride can afford and given to the groom's parents. After marriage, the woman did not lose her family name but somehow the husband took the wife’s name, specifically if the wife belonged to a distinguished clan. The woman before any conquest was given the same importance with any man. She enjoyed freedom in making decisions for the family.

Spanish Era
History continued. The first recorded invasion was by the Spaniards which took place around the 15th century (1565). It stayed onwards for over three hundred years and changed dramatically the society which the Filipinos were accustomed to since the dawn of man. The Spanish conquest profusely if not completely seeped through the minds of the Filipino community thereby mixing up the beliefs, the customs, the traditions, and holistically speaking, the culture which they had way back from their great ancestors.

In these times, it was told there was gradual lowering of the status of women and their rights as compared with that of the men relatively. Since women has always been the weaker sex when it comes to beliefs thus when the Spaniards came almost immediately most women converted to the religion which was introduced by the colonizers and felt bonded to domestic and parochial affairs. “Catechism and prayers became the main pre-occupation of the converted women. Beaterios (nunneries) and colegios (colleges) were set up to indoctrinate the daughters of the elite in the new religion. (Juliet de Lima).

Within this period a rather different Filipino woman emerged. She has become less socially involved with the affairs of the state or government. The colonizers made it possible to transform her image of being a politically motivated lady into a more demure and subdued sense of identity. The Muslim princess has become the “Maria Clara”- or the Filipina lady – one of Dr. Jose Rizal’s (Philippines’ national hero) main character in his novel Noli Me Tangere, depicting a woman during the Spanish conquest who described the woman to be …”low in profile, less politicized, quite hesitant in government dealings and adopted the Spanish woman mentality especially in ways of fashion, in contrast with that of the half-naked body of pre-colonial women”. Much of the image of the Filipino woman in this era of Philippine history owed a variety of manifestations induced in the eyes and confused minds of society, more significantly in the way she moves, the beliefs she instills and the culture she adapted involuntarily if not unwillingly.

The Filipina during the Spanish times wore elegant dresses, spoke light-heartedly, attended social gatherings more often than not, and enjoyed socio-cultural parties complimenting the well-being of her husband and became a very respectable member of the community. She has successfully adjusted to the norms of the Spanish colonizers. But of course, who would not, after more than three hundred years of manipulation and dominance on the part of the Spanish colonizers.

American Period
Little by little the Spaniards exposed the Philippines to international commerce and during the middle of the 18th century; around 1834 Spain opened the Philippine ports to international free trade. But tragically, Spain’s colonization of the Philippine archipelago came to a halt when revolts erupted in the northern part of the country. After three hundred years of being subdued within their own homeland, Filipinos became fed up with the ways the Spaniards maltreated them so they formed groups of oppressions. A long standing source of resentment was the exclusion of Filipinos from the religious orders and the priesthood. This led to the armed revolt of Apolinario de la Cruz in 1841. After witnessing the abuse of the Spanish colonizers, Filipino people consolidated enough force to overthrow the current government under Spain. A revolting group called KATIPUNAN, whose foremost goal was political, wanting to separate the Philippines from Spain, had women chapters. The Filipino women who participated much during the revolution, especially the wealthier ones were not confined to actual fighting only but also donated firearms to the cause. Among these women fighters named -Katipuneras- composed of mainly the wives, mothers, sisters and daughters of the Katipuneros. As the records showed, a very famous lady emerged leader in one crusade for freedom by the name of Gabriela Silang, the wife of Diego Silang who started the Ilocano revolt but was assassinated and died.

Although the oppression was not a successful one, the name “Gabriela Silang” instilled in the minds of the Filipino people most specifically the women as “the hostile yet the defender”.
In these era, the Filipino community especially the women learned another version of sentiments and culture manifestations. As learned, the United States was one of the so-called New World as it was the newest continent reached by Spain in their series of conquests, geographically located kilometers away off the Pacific coast of the Philippines. These Americans unknowingly influenced much of the culture and traditions of the Filipino-Hispanic communities at that time. They wore clothes quite different with the Spaniards. More importantly, the Americans who came in, although not much, were responsible for the introductions of a new wave of fashion, novel methods of communications, diverse ways of leadership and more new sets of rules to follow. The ladies during this time frame became involved in the community in contrast to the Spanish regime wherein the women were quite suppressed as to the involvement to society. Filipino women in the American regime were much more interested in the state affairs and government activities. Filipino women were then westernized- term used to describe the ways in which a society is akin to the norms, customs and traditions to that of the western country, one of which is United States. But it did not last long because as true believers of freedom, the Filipinos raised arms against the Americans in quest for independence. It was the most important year in Philippines history and to most Filipino people, 1946 to be exact.

From then on, the Filipino people grew into a more mature individual. With much interest on political affairs and the society it existed for. A “modern Filipina” has now eeked out of that gloomy and sad past of the invaders’ web, and is now a well-balanced, intellectually adept and society-conscious lady. She is now a carefree woman with talents more than she can handle like do more tasks at the same time.

An example of this is a wife who works eight to ten hours as manager of a certain firm each day and comes home to prepare dinner for the family plus she takes care of her husband’s needs without hesitation on her part whatsoever. She is engaged in various community activites including the church even lead a group of parishioners in serving their own local parish. She takes interests too on matters of political inclination so much so she holds high seats in the government. She has attained more freedom to express herself to the community. In fact, The Philippines first had its lady president (Corazon P. Aquino) and ruler of the land on 1986, when she pursued her reign succeeding her husband.

Today, the Philippine president at the time of this writing is also a woman by the name of President Gloria Macapagal Arroyo. The image remained akin to the Spanish era, but with different conviction this time.
The Filipino woman to this day has undergone more than a couple of changes, modifications and nuturing in the cultures she once had originally, retained her catholic faith but are more determined and expressive than she once was.

Introduction

Since time immemorial, people rely on food for existence. But not only people needs food in order to survive, other species did too. A very good example for this was the plant kingdom. They also need food for existence. But then again this is not fully correct, because the truth is: All living things – including the micro-organisms - must have food to live . It has been an accepted fact that those who do not eat or take in any edible substance weakens and eventually dies. When the first man came to be, it was his impulse to do the act of eating whenever he is hungry. It is an automatic response to hunger- eat anything available. However, the kind of food eaten varies in every specie. Both people and animals eat foods which came from almost the same sources, either plants or from animals that eat plants. Other living things too like the plants, especially the green ones need the sun’s energy to make food- and that is water from the soil and carbon dioxide( a gas in the air).

Certain ways of taking in food differs as well the world over. Chinese people prefer to eat their food by the use of long slender sticks called chopsticks. In Japan, they are fond of eating raw fish set together with cooked sticky rice wrapped with fish stomach linings. Some people use bread to scoop up their food or make use of their fingers like in Hawaii wherein the islanders scoop up poi -a paste-like food made out of a typical Taro plant- with their fingers. In other countries, a few eat from a common serving dish and use fewer utensils; while in other countries particularly Senegal- a family eat food in one common bowl while squatting on the ground.

Whatever, whenever or however food is taken, it is undoubtedly an essential part of our life or anyone's, for that matter. What then is food’s historical behind and how did it affect us all before? What is food’s role now in our society?

Part I - Food story

Prehistoric Times - I learned as i searched through books and other reading materials that in the early years of man’s existence, people ate anything they could find whether plants, fruits, mushroom, root crops, nuts and even edible seeds. They hunt for wild animals too through the wild forest and sometimes ate the beasts straight up right after killing them. Their ways and norms on those times were kind of rudimentary because in those early days they don’t have the knowledge yet of cooking food . They even ate the meat of dead animals that they find while hunting. It was not until they discovered how to make fire themselves when they roast, boil or stew their food and also when they knew the art of making pots.

As my research led me to more intriguing facts, it was during 8000 B.C. when people started to cultivate plants and raised animals for their food needs. It was then when a method of food production -farming- came to be. It helped much in providing a more consistent food supply at that time. Hunting was no longer the ultimate tool to acquire food anymore due to the fact that the people need not roamed around or moved further in order to get food. Farming made them stay a while longer in one place while they sow their crops and harvested them. A group of people once called the ‘nomadic shepherds’ traveled from one place to another while they brought along their raised animals on the road which consisted of camels, goats, and flocks of sheep thereby fulfilling their need for milk and meat as their main diet.

On the Ancient period:
In these times as i scanned a little more the pages of history books, between 3500 and 1500 B.C. the civilizations managed to have their valleys and riverbanks developed, which had fertile soil and favorable climate thus helping the early farmers to produce rich foods abundantly. More so it was said in those areas along the Nile River, i learned that they grew more than two crops every year on the same fields. I can say food indeed was already a very precious commodity even during the times of the Greeks. Many ancient Philosophers then were said to be interested in the kind of food they ate. As Hippocrates stressed out that: three categories of nutriments required for life: Solids, Beverages and air. Health, he explained, was the state of balance of elements and humors whereas disease represented imbalance .

A rather interesting theory about food and its effects transpired in the Eastern part of the globe particularly China. As commonly known, the Chinese followed an age-old system of belief and philosophies, which were handed down from generations thousand of years ago for their existence with that of the ‘Yin- Yang” Philosophy. It was told then by their great Philosopher, K’ung Fu-tzu (Confucius) on proper diet. Let me qoute it here: “Do not… eat your fill of polished rice, nor finely minced meat; eat not rice that has gone sour, or fish and meat that has spoiled…Do not eat except at proper times… never drink wine to the point of becoming confused…never consume wine or dried meat brought from a shop.” I can't fully explain the reason behind this last part. Anyway, in the later years of toil, the Greeks as well as the Romans were not able to supply food enough for their fellow country men which grew unprecedentedly in big numbers, so what they did was worked a feasible plan to elevate the adequacy of food supply by importing food from other neighboring countries in large quantities even doing rude deeds resulting into the taking over of wide land areas which had ample food supplies across Europe. That was the time when the Roman Empire subjugated Persia - now Iran- for fruits and gone farther more to the Orient like China and Japan for their spices, and even traversed the vast deserts of Egypt just to acquire their most important basic diet, which is wheat.

In the Middle Ages
Through the course of time, Food remained a great need. By this time, there were many wars to be fought and more lands to conquer. Most of the properties in Europe were now fought through feudal force. Then the Roman Empire fell (400’s A.D.) and their trading with the international market went down to a very low mark. By this time almost all of the land areas were divided into manors- the term used to a large property with the ‘Lord’ as head and the workers were called peasants. Each manor supplied food enough for the entire community, including the clergy or Church leaders.

When the other wars have to be fought, the troops conquered more lands extending to the Middle East, and fought the holy ward called the Crusades or the war with religious objective especially with the intention of freeing the Holy Land. These crusaders got a taste of new herbs and spices which made their mouth water and in turn intensified their craving for exploring more new lands helping a great deal in the renewed international trade industry which were now flourishing. High Middle Ages as it was called then, the economy was recovering; European trade went to a high blossom. The great entrepreneurs called merchants exchanged goods at great international trade fairs. They brought forth not only goods but also great ideas about new methods of farming, told stories of new industries and exchanged views on special events taking place in that part of Europe and in the rest of the world.

These Modern times
When most of the colonization and conquest were rising, Spain and Portugal took the lead in search for more food spices and eventually landed on a vast land mass on the other side of the globe, which they called America (Western Hemisphere) or the New World. These were the “Voyages of Discovery” years. They conquered the Americas (North, Central and South). It was the dawn of Industrialization. Huge structures were built and massive use of iron was establised as the prime hot item. There were no spices found but nevertheless, new food species were being introduced by the American Indians or the natives of America. These foods include avocados, chocolates, corn, peanuts, peppers, pineapples, sweet and white potatoes, squashes and tomatoes.

Presently, quite a few varieties of foods are now available. The Americans have their breakfast cereals from barely, corn, millet, oats, rice, rye, sorghum and the very important wheat; France have their rich and elaborate dishes; the famous pizza, spaghetti and macaroni of the Italians; the pancakes and pastries of the Belgians; the frankfurters or fondly called sausages and the famous hamburgers of the Germans; the shish-kebab or cubes of lamb, tomatoes, peppers, and onions roasted on a spike-like skewer of the Middle East countries; the hundred-year-old eggs and won-ton which is a kind of dumpling of the Chinese; the sashimi or thin slices of raw food; tofu or soybean curd of the Japanese; the curry or stew-like dish of eggs, fish, meat, or vegetables and cooked in a spicy sauce of the Southeast Asians; Scandinavian’s herring or fish food with cheese and bread; Mexican’s famous tortillas or flat corn-meal breads; Southern Europe’s pretzels and least not forget, England’s sandwiches, roast beef and Yorkshire pudding or a batter pudding baked in beef juices. Yummy!

On the other hand in the local scene, food had quite a story to tell...

History of Filipino Foods in Philippine Setting There is no specific written account on when Filipinos established our own local taste of food. Over 300 years ago, even long before the Spaniards landed on our shores, we were on a system of rowing out to the deep sea in petite boats or bancas, toiling the rugged hillside rice paddies, planting vegetables and fruits out in the fields, and managed to hunt for wild boars deep into the virgin forests. Land and sea were amply supplying nutritiously rich resources and natural wonders. The Filipinos were into boiling or broiling and roasting their food in open fire. Anything that comes in handy when it comes to food was welcomed specially the freshly jerking prawns of the brackish sea and any other seafood stuff they can find. The freshest of fish was made into Kinilaw “cooked” by immersion in vinegar and salt with ginger, onions and red peppers.

However, a certain statement declared that early Filipinos actually cooked food to a minimal point by roasting and steaming only. But with some exceptions too, other Filipino consumers showed some distinct preference for the sour and salty flavored ones like the famous Sinigang- a lightly boiled fish in a sour stock with vegetables and fish sauce. Where these flavors came from varies not only from vinegar or salt but also from fruits which were not ripe enough and were picked like our very own Tamarind, mango and even guava which when extracted gives out a very sour taste. The same thing goes with the Kalamansi -a tiny citrus specie - a breed halfway between an orange and a lime. Still there is one food source which contains salty powers- our bagoong or shrimp paste. These flavors, though pungent in odor, are typically Filipino.

When international or foreign trade improved, various Asian groups of people visited our country. They were the Malaysians, Indonesians, Arabians, Indians and not the least, the Chinese who brought over all sorts of spices and settled their families here, thereby handing down cooking methods which helped much of the natives’ local knowledge of food preparations.

Global Interests on Food Influences

Customs and traditions influence much of what people eat in a particular time of day and how they prepare, serve and eat foods. In many countries and regions as i have learneed particularly Europe, their traditional dishes are mostly based on the kind of food source, usually their local produce. In many instances however, the differences in these varied cultures isn’t too distinct and they follow almost the same basic ingredients. Some variations however, lie on the different seasonings and cooking methods, which ultimately give that kind of dish a special regional or national flavor. With all these factors incorporated herein, food can and have always influenced people in more ways than one.

Here are some of the places which portrays their food type. First in line is Africa. Wholistic overview of African foods, delineate grains and breads as their staple grub. Their common dish called Couscous, made out of coarse grains of steamed wheat with vegetables and bits of meat prepared in a spicy stew and served in a soup-like sauce is said to complete the meal. This is typical to most Africans in both the cities and the countryside and is eaten usually in the evening, because they take in light snacks in other times of the day, at least that what my sources said so. There are some parts of Africa however, wherein the people suffer much from malnutrition due to food shortages brought about by long droughts near the great Sahara desert regions.

Okay, i hope i have said just enough for Africa. Let me illustrate what Europe has to offer. Great cities like France, bears the prestige of being one of the world’s best cuisines. French cooking is considered to be a highly refined art whose culinary techniques were developed and perfected over centuries. One classic French food is the Bouillabaisse. It is a kind of fish stew so rich and complex taken from Mediterranean fishes. The word "bouillabaisse" comes from the process of boiling "bouillir" and reducing "abaisser) that creates the rich stock that forms the base of a bouillabaisse meal. Oh my! this is getting complicated. specific country of Europe like Germany, had a complex array of famous dishes created way back hundreds of years. They have the superb food called Sauerkraut which was actually developed to preserve cabbage. Another spicy food sauerbraten was created, as way of preserving meat, which goes hand in hand with the making of sausages, knows as Bratwurst and Frankfurters.


England, on the other hand, shared less if none at all in the food arena. Much as they are elegant as they have always been, but their food is just simple. English people like roasted and grilled meats and they use fewer spices and sauces than other Europeans do.
Meanwhile in Spain, more complexities in food culture predominates a rather regionalist country. With all the varied settlers beginning from the early Phoenicians to the Greeks, then to the Romans, Spanish food did not developed much. But with the Moors‘ brief conquest, Spain’s culinary heritage blended well and hovered around up to this time, specifically the Paella a festive dish complete with meat or chicken, plus cooked sea foods like shrimps, clams and mussels, poured into sticky rice mixture of sauces and spices. Oh i love eating it too!

In the Americas however, the New World came in existence after European conquest of a landmass in the western front, which eventually was called United States of America. Their food didn’t differ much with the rest of the old World during that time, but the fast growing population who settled in looking for new pastures to plow greatly changed their notions of food. Originally, the American Indians were feasting on meat captured by them and ate vegetables cultivated nearby. With the onset of the new technology, American foods evolved into simpler but meatier genre, giving birth to the famous fast-food chain of stores nationwide. Their lunch is bread packed with a huge slice of processed meat, topped with salad leaves and dressing. Now that isn't lunch for me! Central America, which includes Mexico, defines a more classical taste. The Tortillas, Mexico’s everyday bread, were the principal food of the Aztecs, specifically the corn tortillas, which dates back thousand of years even before Christ. The rest of the Americas down to the southern portion, do not differ much, except with the addition of the cola beverages.

Now we have come to my favorite site:Asia- Characteristics of Indian cuisine, portrays a riot of the sensory stimulation in its meals, with the intensive use of spices. A typical meal savored in India consists of staples, which is rice together with dal, a kind of porridge made out of pulses, seeds of peas and Chapatties, very thin flat baked breads almost like the tortillas. Get this, Samosas- deep-fried pastries are a common sight during snack time. People of India eat various kinds of curries, with chutneys in many meals.

CHAPATTIES

Filipino Dishes - Due to the influx of various people groups that took hold of our country many years ago, it is only justifiable to say our dishes are a myriad of tastes and flavors, which were acquired from many different types of cultures. Filipino cuisine is influenced by these cultures namely: Spanish, Malay, Chinese, Americans, Germans, and Japanese.

The Chinese first gave new ideas on Filipino cuisine when they settled here. They introduced a new style of cooking called deep fry and stir-fry. And also introduced soy sauce, which came from soya (a kind of bean) and are now widely used in almost every Filipino kitchen. Other foods, which came from Chinese influence, are the lumpia -a spring roll dipped in a sauce that consists of simply crushed garlic and vinegar- and noodles thus pansit -sautéed noodles- are a common sight in every Pinoy (Filipino) celebration.

When the Spaniards came, their culture ranked high as one of the most influential on food in the Philippines. We carry roughly around 80 percent of the food cooking recipes now. From Spain came a hundred years of preparing dinner, which taught us the elite aura of eating rich food on the table, the way the Europeans do. It is like fiesta time when foods such as stews of cochido and puchero are present, rice-meat dishes and not to omit fine desserts elaborately done as brazos and torta imperials are found on upper class dining tables. Additional dishes such as relleno, mechado, leche flan are included in these influences.

The Americans also contributed their style of food mixture and introduced canned foods with fruit cocktail as the most popular particularly when Filipinos added our own ingredients, namely the jackfruit (langka), coconut (buko), and palm nuts (kaong). They brought along kitchen conveniences like refrigerators, pressure cookers, oven toasters, and microwave ovens. As to their food contributions, they gave us salads, pies, and the ever famous and most popular of them all: Cola drink. Fast -food came in as a novelty in the food arena in these contemporary days. It is a restaurant where food preparation is speed up to a high degree through a series of innovations permitting the service of more customers faster. Few big names permeated in the market recently like McDonald, KFC and our very own version, Jollibee food chain.

Today, Filipino cuisine have gained enough influences from all different cultures throughout the course of history so much so that it has evolved itself into a self-sufficient creation of diverse taste in the local palate. It has become an art on its own. As Felipe Fernandez-Armesto puts it: “Meals makes us human”(The Guardian. September, 2002) He expressed further that our oldest rituals are our meals. His vision explains this: "The companionable effects of eating together help make us all human. These minute but important details which, compose the dining table, are almost the stabilizing power if not the ultimate reason for closeness in a Filipino household especially when done together at regular times".
